Garlic Chicken Orzo with Roasted Tomatoes

Ingredients:
1 cup uncooked orzo pasta
2 Tbsp. Olive Oil
2 cloves garlic
1/4 tsp. crushed red pepper
2 fresh, skinless boneless chicken breast - cut into bite size pieces
1 Tbsp. chopped fresh parsley
3 cups fresh spinach leaves
1/2 cup roasted tomatoes (recipe to come soon)
fresh grated Parmesan cheese for topping

1. Bring a large pot of salted water to boil.  Add orzo and cook for 8 to 10 minutes.  Until al dente, then drain.
2.  Heat the oil in a large skillet over medium high heat, add the garlic and red pepper and saute for 1 to 2 minutes until fragrant.  Stir in chicken, season with salt, and cook until lightly browned and juices run clear.  Add tomatoes and mix well, reduce heat to medium.  Mix in parsley and orzo then add spinach.  Continue cooking 5 minutes, stirring often until spinach is wilted.  Serve topped with Parmesan cheese.
